Ingredients

Scale
  • 4 cups all-purpose flour
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 cup whole milk, warmed
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1 tsp salt
  • 1 cup fresh raspberries, mashed
  • 3 large eggs, at room temperature

Instructions

  1. Activate the Yeast: In a small bowl, combine warm milk and yeast with 1 tsp sugar. Let sit until frothy (5-10 minutes).
  2. Create the Dough: In a large mixing bowl, whisk together flour, sugar, and salt. Make a well in the center; add yeast mixture and eggs. Mix until combined.
  3. Knead: Transfer dough to a floured surface and knead for about 10 minutes until smooth and elastic.
  4. Incorporate Butter: Gradually knead in softened butter until fully incorporated; the dough should be rich and glossy.
  5. First Rise: Place dough in a greased bowl, cover with plastic wrap or a damp cloth, and let rise until doubled (1-2 hours).
  6. Add Raspberry Swirl: Roll out the risen dough into a rectangle. Spread mashed raspberries over it, roll tightly into a log, then slice lengthwise to reveal swirls.
  7. Second Rise & Bake: Place in a greased loaf pan and let rise for another 30 minutes while preheating oven to 350°F (175°C). Bake for 30-35 minutes until golden brown.
