  • 1 cup heavy cream (cold)

  • 1 tbsp unflavored gelatin powder
  • 3 tbsp cold water
  • 1/2 cup sparkling water (flavored if desired)

Instructions

  1. Gently wash and dry the raspberries. Puree them with half the sugar in a blender until smooth. Strain if desired.
  2. In a small bowl, sprinkle gelatin over cold water and let it bloom for about 5 minutes. Heat gently in the microwave until dissolved.
  3. Whip heavy cream with remaining sugar until soft peaks form.
  4. Fold raspberry puree and dissolved gelatin into whipped cream gently.
  5. Add sparkling water while folding carefully to maintain airiness.
  6. Distribute the mixture into individual cups or glasses and chill for at least 2 hours before serving.
