  • 2 large eggs

  • 1 tsp baking powder
  • 3 tbsp instant coffee granules (dissolved in 3 tbsp water)
  • 1 cup mascarpone cheese
  • 1 tsp vanilla extract
  • Unsweetened cocoa powder (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a bowl, cream together the unsalted butter, granulated sugar, and brown sugar until fluffy.
  3. Beat in the eggs one at a time and add the vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking powder, and dissolved coffee granules. Gradually mix this into the wet ingredients until just combined.
  5. In a separate bowl, blend the mascarpone cheese with powdered sugar until smooth.
  6. Spread half of the dough into the prepared pan, add the mascarpone layer on top, then pour the remaining dough over it.
  7. Bake for 25-30 minutes or until golden brown. Let cool completely before slicing.
