  • 1 pound chicken breast cubed
  • 1 cup red bell pepper diced
  • 1 cup onion diced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For the Pita Pockets
  • 4 whole pita bread
  • 1 cup shredded lettuce
  • 1 cup cherry tomatoes halved
  • 1 cup sour cream for serving

Method
 

Prepare the Chicken Filling
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the cubed chicken, red bell pepper, onion, chili powder, cumin, salt, and black pepper. Mix well to coat the chicken evenly.
Bake the Chicken
  1. Spread the chicken mixture onto a baking sheet lined with parchment paper.
  2. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and no longer pink.
