Method
Prepare the Batter
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, combine the milk, egg, and melted butter. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Cook the Pancake Poppers
- Preheat a mini muffin pan in the oven at 375°F (190°C).
- Once the pan is hot, lightly grease each muffin cup with cooking spray or butter.
- Spoon the batter into each muffin cup, filling them about 2/3 full.
- Sprinkle chocolate chips on top of the batter in each cup.
- Bake in the oven for 12-15 minutes, or until golden brown and a toothpick inserted comes out clean.
Serve
- Remove the pancake poppers from the oven and let them cool for a few minutes.
- Serve warm drizzled with maple syrup and topped with sliced bananas.
