Ingredients
  

For the Flatbread
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 3/4 cup water adjust as needed for dough consistency
For the Filling
  • 2 cups fresh spinach packed
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Method
 

Prepare the Flatbread Dough
  1. In a large mixing bowl, combine the flour, salt, and baking powder.
  2. Gradually add water, mixing until a soft dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Cover the dough with a clean kitchen towel and let it rest for 10 minutes.
Make the Filling
  1. In a skillet, sauté the spinach over medium heat until wilted, about 2-3 minutes.
  2. In a mixing bowl, combine the sautéed spinach, ricotta, mozzarella, garlic powder, and black pepper.
Assemble the Flatbreads
  1. Divide the dough into 4 equal portions and roll each into a circle about 6 inches in diameter.
  2. Place a generous amount of filling in the center of each circle.
  3. Fold the dough over to create a half-moon shape and press the edges to seal.
Cook the Flatbreads
  1. Heat a non-stick skillet over medium heat and lightly grease it.
  2. Cook each flatbread for about 3-4 minutes on each side until golden brown and cooked through.
Serve
  1. Remove from skillet and let cool slightly before serving.
  2. Cut in half and enjoy warm, optionally with a side of yogurt or dipping sauce.

Notes
