Ingredients
  

For the Base
  • 6 corn tortillas corn tortillas cut into triangles
  • 2 cups green salsa store-bought or homemade
For the Topping
  • 1 cup fresh cheese crumbled (like queso fresco)
  • 1 avocado avocado sliced
  • 1/4 cup sour cream for drizzling
  • 1/4 cup red onion finely chopped
  • 1/4 cup cilantro chopped for garnish
  • 2 large eggs optional, fried or poached

Method
 

Prepare the Tortillas
  1. Cut the corn tortillas into triangles and spread them out on a baking sheet.
  2. Bake the tortilla triangles in a preheated oven at 375°F (190°C) for about 10 minutes or until golden and crispy.
Make the Chilaquiles
  1. In a large skillet, heat the green salsa over medium heat until it starts to simmer.
  2. Add the crispy tortilla chips to the skillet and gently toss to coat them in the salsa, cooking for another 2-3 minutes.
Assemble the Dish
  1. Transfer the chilaquiles to serving plates.
  2. Top with crumbled fresh cheese, sliced avocado, a drizzle of sour cream, chopped red onion, and cilantro.
  3. If using, place a fried or poached egg on top of each serving.

Notes

For a spicier version, add sliced jalapeños to the toppings. You can also use leftover salsa for more flavor.
