Prepare the Tortillas
- Cut the corn tortillas into triangles and spread them out on a baking sheet.
- Bake the tortilla triangles in a preheated oven at 375°F (190°C) for about 10 minutes or until golden and crispy.
Make the Chilaquiles
- In a large skillet, heat the green salsa over medium heat until it starts to simmer.
- Add the crispy tortilla chips to the skillet and gently toss to coat them in the salsa, cooking for another 2-3 minutes.
Assemble the Dish
- Transfer the chilaquiles to serving plates.
- Top with crumbled fresh cheese, sliced avocado, a drizzle of sour cream, chopped red onion, and cilantro.
- If using, place a fried or poached egg on top of each serving.
