Ingredients
  

For the Cake
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup grated carrots
  • 1 teaspoon vanilla extract
For the Frosting
  • 8 ounces cream cheese softened
  • 1/2 cup unsalted butter softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
For Garnish
  • 1/4 cup chocolate shavings
  • 1/4 cup chopped walnuts

Method
 

Prepare the Cake
  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, combine vegetable oil, eggs, grated carrots, and vanilla extract. Stir until well mixed.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then remove from pans and cool completely on a wire rack.
Prepare the Frosting
  1. In a mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
  2. Gradually add powdered sugar and vanilla extract, mixing until fully combined and fluffy.
Assemble the Cake
  1. Once the cakes are completely cool, place one layer on a serving plate.
  2. Spread a generous amount of frosting on top of the first layer.
  3. Place the second cake layer on top and frost the top and sides of the cake.
  4. Garnish with chocolate shavings and chopped walnuts.

Notes
