Ingredients
  

For the Base
  • 2 cups all-purpose flour
  • 1 cup unsalted butter softened
  • 3/4 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semi-sweet chocolate chips
For the Filling
  • 1 cup cream cheese softened
  • 1/2 cup powdered sugar
  • 1/4 cup semi-sweet chocolate chips melted

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Add in the eggs one at a time, mixing well after each addition, and then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  5. Fold in the chocolate chips until evenly distributed throughout the dough.
  6. In a separate bowl, mix the softened cream cheese, powdered sugar, and melted chocolate until smooth to make the filling.
  7. Take a small amount of cookie dough and flatten it in your hand. Place a teaspoon of the cream cheese filling in the center, then fold the dough around it and roll it into a ball.
  8. Place the cookie rolls on the prepared baking sheet and bake for 10-12 minutes or until the edges are lightly golden. Allow to cool on a wire rack.

Notes
