  • 4 plain bagels bagels halved
  • 2 cups cottage cheese preferably low-fat
  • 1 cup shredded mozzarella cheese
  • 3 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Topping
  • 1 cup cherry tomatoes halved
  • 1 tablespoon fresh basil chopped
  • 1 tablespoon olive oil for drizzling

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the cottage cheese, eggs, garlic powder, onion powder, salt, and black pepper until well combined.
  3. Place the halved bagels in a greased baking dish, cut side up.
  4. Pour the cottage cheese mixture evenly over the bagels, ensuring they are well coated.
  5. Sprinkle shredded mozzarella cheese on top of the mixture.
  6. Arrange the halved cherry tomatoes on top, followed by a drizzle of olive oil.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  8. Remove from the oven, sprinkle with fresh basil, and let cool for a few minutes before serving.
