Ingredients
  

For the Base
  • 1 pound breakfast sausage cooked and crumbled
  • 4 large eggs
  • 2 cups hash browns frozen or fresh
  • 1 cup milk whole or 2%
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Topping
  • 2 cups shredded cheddar cheese or your favorite cheese
  • 1/4 cup green onions chopped, for garnish

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the breakfast sausage over medium heat until browned. Drain excess fat and set aside.
  3. In a large mixing bowl, whisk together the eggs, milk, salt, and pepper.
  4. In a greased 9x13 inch baking dish, layer the hash browns evenly at the bottom.
  5. Spread the cooked sausage over the hash browns, then pour the egg mixture evenly on top.
  6. Sprinkle the shredded cheddar cheese over the entire casserole.
  7. Bake in the preheated oven for 40-45 minutes, or until the eggs are set and the top is golden brown.
  8. Remove from the oven and let cool for a few minutes. Garnish with chopped green onions before serving.

Notes
