For the Base
  • 2 cups sweet corn kernels fresh or frozen
  • 1 cup heavy cream
  • 1 cup creamed corn
  • 2 large eggs beaten
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
For the Topping
  • 1 cup shredded cheddar cheese
  • 1 cup panko breadcrumbs for a crunchy texture
  • 2 tablespoons butter melted

Method
 

Prepare the Base
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine sweet corn kernels, heavy cream, creamed corn, beaten eggs, salt, black pepper, garlic powder, and onion powder. Mix until well combined.
Assemble the Casserole
  1. Pour the corn mixture into a greased 9x13 inch baking dish.
  2. In a separate bowl, mix together the shredded cheddar cheese, panko breadcrumbs, and melted butter until evenly coated.
  3. Sprinkle the cheese and breadcrumb mixture evenly over the corn mixture in the baking dish.
Bake
  1. Place the baking dish in the preheated oven and bake for 45 minutes, or until the top is golden brown and the casserole is set.
  2. Remove from the oven and let it cool for about 10 minutes before serving.
