Ingredients
  

For the Base
  • 1 pound ground beef preferably lean
  • 2 medium zucchini sliced
  • 1 cup bell pepper diced
  • 1 cup onion diced
For the Seasoning
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
For Garnish
  • 1/4 cup fresh parsley chopped

Method
 

  1. In a large skillet over medium heat, add the ground beef. Cook until browned, about 5-7 minutes, breaking it apart with a spoon.
  2. Add the diced onion and bell pepper to the skillet. Cook for an additional 3-4 minutes until softened.
  3. Stir in the minced garlic, oregano, paprika, salt, and pepper. Cook for 1-2 minutes until fragrant.
  4. Add the sliced zucchini to the skillet. Stir well to combine and cook for another 5-7 minutes until the zucchini is tender.
  5. Check seasoning and adjust salt and pepper if necessary.
  6. Remove from heat and sprinkle with fresh parsley before serving.

Notes
