Ingredients
  

For the Carrots
  • 1.5 pounds baby carrots
  • 2 tablespoons olive oil
  • 2 tablespoons pure maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine olive oil, maple syrup, Dijon mustard, salt, and black pepper. Whisk until well combined.
  3. Add the baby carrots to the bowl and toss until they are evenly coated with the mixture.
  4. Spread the coated carrots in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and lightly caramelized, stirring halfway through.
  6. Once done, remove from the oven and let them cool for a few minutes.
  7. Garnish with chopped fresh parsley before serving.
