Ingredients
  

For the Base
  • 1 pound ground beef lean
  • 1 cup long-grain rice uncooked
  • 1 cup beef broth
  • 1 cup black beans canned, drained and rinsed
  • 1 cup corn canned or frozen
  • 1 tablespoon olive oil
  • 2 teaspoons taco seasoning
For the Garnish
  • 1 cup cherry tomatoes halved
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/4 cup cilantro chopped

Method
 

Cook the Beef
  1. In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook until browned, about 5-7 minutes.
  2. Drain any excess fat from the skillet.
Add Ingredients
  1. Stir in the taco seasoning, followed by the rice, beef broth, black beans, and corn.
  2. Bring the mixture to a boil, then reduce heat to low.
Simmer
  1. Cover the skillet and let it simmer for 15-20 minutes, or until the rice is cooked and has absorbed the liquid.
Garnish and Serve
  1. Once the rice is cooked, fluff it with a fork and remove from heat.
  2. Top with cherry tomatoes, shredded cheese, and chopped cilantro.
  3. Serve with lime wedges on the side.
