Ingredients
  

For the Base
  • 1 cup mascarpone cheese
  • 1 cup heavy cream chilled
  • 1/2 cup pumpkin puree
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
For Assembly
  • 1 cup strong brewed coffee cooled
  • 24 ladyfingers ladyfingers
  • 1 cup whipped cream for topping
  • 1 teaspoon cinnamon for dusting

Method
 

Prepare the Cream Mixture
  1. In a mixing bowl, combine the mascarpone cheese, pumpkin puree, powdered sugar, vanilla extract, and pumpkin pie spice. Mix until smooth and well combined.
  2. In another bowl, whip the chilled heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until fully incorporated.
Prepare the Coffee Mixture
  1. Brew a strong cup of coffee and allow it to cool to room temperature.
Assemble the Tiramisu
  1. Dip each ladyfinger into the cooled coffee for a few seconds until just soaked. Do not over-soak.
  2. Arrange a layer of soaked ladyfingers in the bottom of a serving dish.
  3. Spread half of the pumpkin cream mixture over the ladyfingers. Repeat with another layer of soaked ladyfingers followed by the remaining pumpkin cream mixture.
Chill the Tiramisu
  1. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
Serve and Garnish
  1. Before serving, top the tiramisu with whipped cream and dust with cinnamon.
  2. Slice and serve chilled. Enjoy!
