One-Pan Cheeseburger Tater Tot Pasta

This hearty one-pan dish combines the flavors of a classic cheeseburger with creamy pasta and crispy tater tots, making it a perfect family-friendly meal.

Ingredients
  

For the Base
  • 1 pound ground beef preferably 80/20 for flavor
  • 1 cup onion finely chopped
  • 3 cups penne pasta
  • 2 cups beef broth low sodium recommended
  • 1 cup cheddar cheese shredded
For the Topping
  • 3 cups frozen tater tots
  • 1 cup pickles sliced, for garnish
  • 1 tablespoon ketchup for serving
  • 1 tablespoon mustard for serving

Method
 

  1. In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes.
  2. Add the chopped onion to the skillet and cook until softened, about 3-4 minutes.
  3. Stir in the penne pasta and beef broth, bringing the mixture to a boil.
  4. Once boiling, reduce the heat to low, cover, and simmer for 10-12 minutes, or until the pasta is tender and most of the broth is absorbed.
  5. Stir in the shredded cheddar cheese until melted and combined.
  6. While the cheese is melting, preheat the oven to 425°F (220°C).
  7. Spread the frozen tater tots evenly over the pasta mixture.
  8. Bake in the preheated oven for 15 minutes, or until the tater tots are golden brown and crispy.
