Parmesan Garlic Hasselback Potatoes

Deliciously crispy and tender Hasselback potatoes topped with garlic and Parmesan cheese, perfect as a side dish or a comforting snack.

Ingredients
  

For the Potatoes
  • 4 medium Russet potatoes
  • 4 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For the Topping
  • 4 cloves garlic minced
  • 1 cup Parmesan cheese grated
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Potatoes
  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the Russet potatoes thoroughly.
  3. Using a sharp knife, make thin slices across the top of each potato, being careful not to cut all the way through.
Season the Potatoes
  1. Drizzle olive oil over each potato, making sure it seeps into the cuts.
  2. Sprinkle salt and black pepper evenly over the potatoes.
Bake the Potatoes
  1. Place the prepared potatoes on a baking sheet lined with parchment paper.
  2. Bake in the preheated oven for 30 minutes.
Add Toppings
  1. While the potatoes are baking, mix the minced garlic with the remaining olive oil.
  2. After 30 minutes, remove the potatoes from the oven and brush the garlic oil mixture over them.
  3. Sprinkle the grated Parmesan cheese on top.
Final Bake
  1. Return the potatoes to the oven and bake for an additional 15 minutes, or until golden and crispy.
  2. Remove from the oven and sprinkle with fresh parsley before serving.

Notes
