Ingredients
  

For the Cookie Base
  • 1 cup unsalted butter softened
  • 1 cup peanut butter creamy or crunchy
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
For the Filling
  • 1 cup chocolate chips semi-sweet
  • 1/2 cup peanut butter for filling
For the Topping
  • 1 cup chocolate chips melted
  • 1/4 cup chopped peanuts optional for garnish

Method
 

Prepare the Cookie Dough
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, peanut butter, brown sugar, and granulated sugar until smooth. Add the eggs and vanilla, mixing until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Assemble the Cookies
  1. Scoop tablespoon-sized amounts of the cookie dough and flatten them slightly. Place a teaspoon of peanut butter in the center of half of the cookies, then top with another flattened cookie to create a sandwich.
  2. Place the filled cookies on the prepared baking sheet and bake for 10-12 minutes or until the edges are lightly golden. Let them cool on the sheet for 5 minutes before transferring to a wire rack.
Finish with Chocolate Topping
  1. Melt the chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
  2. Drizzle the melted chocolate over the cooled cookies and sprinkle with chopped peanuts if desired. Allow the chocolate to set before serving.

Notes
