Method
Prepare the Topping
- Preheat your oven to 350°F (175°C).
- In a small bowl, mix melted butter and brown sugar until combined.
- Pour the mixture into the bottom of a 9-inch round cake pan.
- Arrange pineapple slices on top of the brown sugar mixture and place a maraschino cherry in the center of each pineapple slice.
Make the Cake Batter
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Bake the Cake
- Pour the cake batter over the pineapple and brown sugar mixture in the cake pan.
- Smooth the top with a spatula.
- Bake in the preheated oven for 35-40 minutes or until a toothpick inserted in the center comes out clean.
Cool and Serve
- Remove the cake from the oven and let it cool in the pan for 10 minutes.
- Carefully invert the cake onto a serving plate to reveal the pineapple topping.
- Allow to cool slightly before slicing and serving.
