Prepare the Potatoes
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the cubed potatoes with olive oil, oregano, thyme, garlic powder, onion powder, salt, and pepper.
- Spread the potatoes on a baking sheet in a single layer.
- Roast in the oven for 25 minutes, or until golden and tender, stirring halfway through.
Cook the Rice
- In a saucepan, bring the vegetable broth to a boil.
- Add the rinsed rice to the boiling broth.
- Reduce heat to low, cover, and simmer for about 15 minutes, or until the rice is cooked and the liquid is absorbed.
Combine and Serve
- Once the rice and potatoes are cooked, combine them in a large bowl.
- Toss gently to mix and adjust seasoning if necessary.
- Serve warm as a side dish or light main course.
