Salmon Croquettes

Ingredients
  

For the Base
  • 2 cups cooked salmon flaked
  • 1 cup bread crumbs preferably panko
  • 1 large egg
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon dijon mustard
  • 1 teaspoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For Cooking
  • 1/4 cup olive oil for frying

Method
 

Prepare the Mixture
  1. In a large bowl, combine the flaked salmon, bread crumbs, egg, parsley, dijon mustard, lemon juice, salt, and pepper.
  2. Mix until all ingredients are well combined.
Form the Croquettes
  1. Take a handful of the mixture and form it into small patties, about 2 inches in diameter.
  2. Place the formed patties on a plate.
Cook the Croquettes
  1. Heat the olive oil in a skillet over medium heat.
  2. Once the oil is hot, add the salmon patties to the skillet, being careful not to overcrowd.
  3. Cook for about 4-5 minutes on each side, or until golden brown and crispy.
Serve
  1. Transfer the cooked croquettes to a paper towel-lined plate to drain excess oil.
  2. Serve warm with your choice of dipping sauce.

Notes
