Method
Make the Cake
- Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
- In a large mixing bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, cream the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.
- Alternate adding the flour mixture and buttermilk to the butter mixture, starting and ending with the flour mixture.
- Fold in the chopped apples until evenly distributed.
- Divide the batter evenly among the prepared pans and smooth the tops.
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
Make the Frosting
- In a large bowl, beat the softened butter until creamy.
- Gradually add the powdered sugar and mix until combined and fluffy.
- Add the apple cider and vanilla extract, mixing until smooth and spreadable.
Assemble the Cake
- Once the cakes are completely cooled, place one layer on a serving plate.
- Spread a layer of frosting on top of the first cake layer.
- Place the second layer on top and repeat the frosting process.
- Top with the third layer and frost the top and sides of the entire cake.
- Decorate with additional chopped apples or cinnamon if desired.
- Slice and serve at room temperature.
